Mama Roy Salad

This is the most simple and delicious salad the Sliva sisters have come across and it was invented by Alex’s mama… hence the name of it: Mama Roy Salad.  It’s perfectly convenient for that last minute side dish you need before unexpected company arrives but also perfect to serve at a dinner party.

Serves 4-6

3 heads romaine lettuce, washed and chopped

1/4 red onion, thinly sliced

Shredded Pecorino Romano cheese (as much as you like)

2-3 tbsp extra light olive oil

A few shakes of red wine vinegar – about 1 tbsp or so worth

Salt, to taste

A sprinkle of cranraisins (optional – but Mama Roy’s favorite)

I think this is pretty self explanatory – Just toss all the ingredients together and enjoy it!
